BJ Cruse demonstrating the process of preparing walgAn (abalone) for meals. The first thing to do is to wash the abalone to wash all the sand off. Then you scrape the back to take the black colour off, otherwise it's too rich.

After the walgAn (abalone) has been cleaned, opened and bashed it is ready for cooking.

Cooking walgAn (abalone) on a barbecue. Traditionally the meat was placed back into a shell and the shell with abalone was place on hot coals to cook in the shell. Over time they began being cooked over barbecues or in stews and curries.
